Breakfast Butter Croissant
Lola's Cafe needs no introduction as over a short period of time, it has established itself as a hidden gem in Kovan, serving delicious All Day Breakfast. I am recommending the Breakfast Butter Croissant because it was the best I have ever tasted. It consists of butter croissant, scrambled eggs, bacons, honey baked ham, cheddar cheese, Cajun mayo and garden salad.

The Breakfast Butter Croissant won my heart simply because of the flaky and buttery croissant. The buttery fragrance of the bread exploded in my mouth and left me wanting more. The scrambled eggs were smooth. The honey baked ham and cheddar cheese were of good quality. The Cajun mayo added a nice touch of sweetness to the heavenly combination.

How to roast a chicken conveniently?

Add caption

One day, I ran out of ideas how to marinate a whole chicken. I opened my fridge and found my bottle of Bulgogi sauce purchased from NTUC Finest. The flavours were awesome and agreed by C.

Tips-
  • I used a microwave convectional oven and pressed roasted chicken option. If your chicken turns out pale looking, do not panic, just sprinkle some herbs over it and use a spoon to scoop the sauce and pour over the chicken to prevent the skin from cracking or drying up.
  • If you want your sides to be very delicious, roast them together with the chicken. The pumpkin, broccoli and potatoes would soak up the essence of the sauce. The downsides would be less sauce for your chicken. To strike a balance, take the vegetables out before the chicken.
Healthy dish! To cook a whole chicken takes around an hour. Give yourself ample time if you are expecting guests!

Yummy, Can I eat now?

How to cook Red Snapper Mee Sua Soup with Jagabee Purple Potato?

I was sharing with you that I had recently gone for my wisdom teeth surgery and today is Day 7. One of the Singapore Home Cooks member suggested that I cook Fish Mee Sua and it is such a fantastic idea! I also had a craving for yam so I decided to use Jagabee Purple Potatoes as a substitute and it turned out to be very delicious!
Red Snapper Mee Sua Soup with Jagabee Purple Potato

Ingredients

Dried Split Fish(Anchovies)
Red Snapper Fillet
Tomatoes
Pek Chye
Siken Tofu
Mee Sua
Jagabee Purple Potato
Salt

Sashimi for me?

Preparation

Red Snapper
I massaged the fish with salt and rinsed it thoroughly to remove any fishy smell and to kill some germs.
Tip: It is very important to try your best to slice the Red Snapper into equal thickness so that they will be cooked around the same time.

I sprinkled 1-2 teaspoons of salt and marinated the fish. This is to further ensure that my fish will taste fresh and not smelly. I then put the fish in the fridge while I prepared the other ingredients.

Ingredients
Jagabee Purple Potato

Let's Start Cooking!

I always use Dried Anchovies (small ones) to make the base for my fish or fishball soup because I try to avoid processed chicken stock or MSG as much as possible. You will be surprised at how much flavour Dried Anchovies can provide as a base. If you want to further enhance the flavour of your soup, you can fry some garlic, onions with the anchovies before adding water.

Dried Split Fish
I placed two handfuls of Dried Split Fish, Siken Tofu and tomatoes into my pot. The type of pot you choose for soup is very important. Some pots are able to extract a lot of flavours from the ingredients. Today, I used Neoflam pot since the cooking time is very short. For longer cooking time like herbal soups, I used Vision Glass pot. Rice cooker is the best in terms of flavours but it is very difficult to wash.
Neoflam Pot
The Neoflam pot claims to use a natural coating for its non-stick feature and I believe that the tiny opening at the knob contributes to it being able to extract as many flavours from the ingredients in a soup as possible.

Next, I poured Tap Water into the pot and turned the stove to high flame until it was boiling. Do not ever use boiling hot water initially for cooking any type of soups. All TCM practitioners will tell you to use tap water because boiling water destroys all the nutrients. Based on my own experience, using tap water makes the soup more flavourful.

Once the water had boiled, I turned the stove to a low simmer and boiled it for 15 minutes. I used the time to wash the vegetables and cut them.
Tomato juice
15 minutes later, I put 2 packets of Jagabee Purple Potato and vegetables into the pot. I also scooped the tomatoes and squashed the tomatoes juice out with a metal spoon. A good fish soup tastes tangy.

How to cook Mee Sua?

Cooking Mee Sua separately
Mee Sua has a terrible weird taste. If you like the weird taste, you can cook the Mee Sua in the soup directly. Otherwise, you must cook it separately.

I cooked the Mee Sua in another pot for around 1 minute. Mee Sua is cooked very quickly. I then transferred all the Mee Sua into another bowl and wash it in tap water to further remove the weird smell. I then drained the Mee Sua of any excess water.
Wash Mee Sua with tap water
Finally, it was time to place all the Red Snapper slices into the bubbling soup at the same time. It took at most 5 minutes to cook the fish.

Once the fish were cooked, I placed the Mee Sua onto my serving bowl and added the fish soup with all the yummy ingredients. Once plated, I sprinkled some white pepper on the soup. Yums!

Amazingly, the Jagabee Purple Potatoes tasted absolutely soft and delicious! The Red Snapper was extremely fresh. The soup also had the sweetness of the fish and the tanginess from the tomatoes.

Beautiful purple potatoes!

I added some crispy ones straight from the packet!

Kooks Creamery a hidden gem in Serangoon - Lava Cookie with Ice Cream is a Must Try!

The most charming part about Kooks Creamery is their location - it is tucked away in the neighbourhood of Serangoon, a stone's throw from delicious Roasted Meat stall in the coffeeshop and Plain Jane.

When I arrived, everyone already had a cup of ice cream. No one was trying out their signature ice cream set. Not knowing that it was a treat by Miss XL, I exclaimed that we must try Signature Lava Set with single scoop ice cream. I read so much about it and of course I needed to try it out since we were here. I ordered Rum and Raisin.

The Signature Lava Cookie with Ice Cream seemed to take forever to arrive. It could be due to the fact that it was full house on a Saturday evening. This should be good news to the two sisters who started Kooks. I reminded the waitress about my order and she explained that it would take a while as they baked the cookies on the spot.

When it was finally served, the waitress asked if I wanted her to "dump" the ice cream onto the Lava Cookie. Sure! I enjoy such effects!
Waitress placing ice cream on top of cookie
When the ice cream landed on top of the cookie, fear not, nothing happened. She then used a spoon and pushed the ice cream down, allowing the melted chocolate to ooze out from the cookie.

Kooks Signature Lava Set - Chocolate molten cookie with single scoop ice cream S$8.50
The warm cookie, warm melted chocolate and ice cream went very well together. I like to experience hot and cold sensation in my dessert, but not in relationships. It was an enjoyable dessert but I was not so sure if I would travel out of my way to taste it again. I would do so for Udders Waffles Ice Cream.

One drawback could be the fact that the Rum and Raisin ice cream was extremely forgettable. It lacked the punch that an ice cream with alcohol usually delivers. The texture of the ice cream was not as smooth as Udders.

I highly recommend you to eat the Sio Bak rice in the nearby coffeeshop and then walked for 2 minutes to Kooks Creamery for your dessert. Perfect!

This post is dedicated to Miss XL for the warmth she exuberates, witty jokes that she shares and her generosity. Thank you for indulging me in the delicious ice cream treat!

Ju Hao, MOF My Izakaya and Danro Hot Pot all in one restaurant - a Must Try!

The latest dining concept introduced by MOF blew me away! Diners are presented with Western, Japanese and Shanghainese menus. This was the first time I got to try delicious Shanghainese Food, Japanese Sashimi and Matcha dessert in a restaurant setting and it was not a food court concept. Legit!
Interesting Combo
My sister and I had just finished our Yoga class in Bugis and we were heading to Ju Hao. We wanted to see which restaurant was so brave to compete with Ding Tai Feng and Crystal Jade La Mian. We were very confused with the posters because we saw Danro and Ju Hao stating the same address #02-45. 0245 sounds like a nice number? We were even wondering if one of them has closed down and the shopping mall management had forgotten to change the poster.

When we finally found Ju Hao, a waitress kindly redirected us to Danro main entrance. She assured us that we could order Ju Hao in Danro. I was very excited!
Juicy Steamed Pork Dumpling Xiao Long Bao with sashimi???
The first order to arrive was my less than S$2 green tea. This restaurant had already given me a very good impression with their entire pot of green tea served with a tea light - very thoughtful.
Tea Light to warm the green tea
The sashimi from MOF My Izakaya was fresh. My sister felt that although it was fresh, it lacked the firmness and sweetness of another type of sashimi she had tried in other restaurants.

Dumplings, Wantons and Noodles

Xiao Long Bao filled with delicious soup
Xiao Long Bao makes or breaks a Shanghainese restaurant. I have visited many Ding Tai Feng and Crystal Jade wannabes and they were usually a let down. Ju Hao surprised me tremendously with their plump Xiao Long Baos, filled with a lot of soup, and yet the skins did not break. Amazing! Very delicious! Ju Hao originated from a humble stall in Lavender Food Square.

Wanton with Vinegar & Chilli Oil (Hong You Chao Shou)
I am a fan of Ding Tai Feng Hong You Chao Shou because of its vinegary, spicy and tasty sauce. Ju Hao's version paled in comparison because the sauce was too sour. It lacked salt and spice.
Wanton with Vinegar & Chilli Oil (hong you chao shou)

The quality of the wantons was good. The skin was very soft and the meat was very juicy. I hope that they are able to improve their sauce and the dish will be perfect.
Generous meat filling
Although the wantons in chilli oil was not comparable to Ding Tai Feng, I would still order it the next time because it was still delicious. The meat was very yummy.

Mushroom Minced Meat Noodle
The Mushroom Minced Meat Noodle was a dark horse. It was very delicious and the flavours of the dish won many other restaurants.
Good La Mian
The noodles itself was excellent. It was not too starchy and we finished the minced meat noodles very quickly and savouring every bit of the tasty sauce.

Japanese Matcha Drink and Dessert

Matcha Latte
I am not a fan of Matcha Latte because I always find it too rich and sweet. Surprisingly, MOF Matcha Latte was very nice.
Matcha flavour ice cream with deep fried Japanese premium sweet potato topped with red beans
The most enjoyable part of my dining experience was that I could order a JAPANESE dessert after my Shanghainese cuisine. The Matcha flavour ice cream with sweet potato is a Must Try because everything went very well together - the hot Matcha sauce, the warm, crispy sweet potato, sweet red beans and soft serve ice cream
Pouring Matcha sauce over the soft serve ice cream
The Matcha sauce flavour was just right. It was not overly bitter nor diluted in flavour. It was also very fun to pour it over the ice cream ourselves. We could also control the amount of Matcha flavour in our ice cream.
Premium quality sweet potato
The Japanese premium sweet potato was definitely the star of the dish. They were crispy on the outside and extremely soft and sweet on the inside. I could not get enough of this dessert. Thumbs up!
Western, Japanese and Shanghainese menus
Cosy and comfortable setting

Ju Hao at #02-45
Danro by MOF at #02-45
The prices for Ju Hao was lower than Ding Tai Feng and the food quality of the items that we ordered were also on par. Overall, for the interesting combination of having sashimi, dumplings and Matcha dessert, we did not pay a bomb and I cannot wait to be back!
